Mushrooms for Your Health!
If you're a mushroom lover, not only can you enjoy these
delectable edible fungi, but if you choose certain
varieties, you will also enhance your health.
Here are 5 varieties of Medicinal mushrooms and the benefits you get
from eating them:
1. Shitake mushrooms stimulate your immune system to product white blood cells that
destroy cancer cells and increase resistance to viruses and bacteria.
2. Reishi mushrooms are anti-inflammatory. They reduce cholesterol and like the
Shitake mushrooms, Reishi mushrooms increase the
immune system to fight cancer cells and viruses.
3. Maitake mushrooms stabilize blood sugar, are potent immune system enhabncers and
are a good source of vitamins B-2, C, D, niacin, magnesium, potassium, fiber and
amino acids. Like Shitake and Reishi mushroms, they have anti-tumor and anti-viral effects.
4. Cordyceps mushrooms also increase immunity and have anti-tumor effects. In addition,
they boost
endurance, increase sex drive, improve heart and lung function and reduce cholesterol.
5. Enoki mushrooms have anti-cancer properties and are known to lower blood pressure.

Healthy Recipe of the Month
Mushroom and Veggie Stir-Fry
1 cup your favorite mushrooms sliced
1 cup of sliced onions
1 cup of sliced bell peppers
2 cloves garlic minced
2 medium zucchini sliced 1/4" thick
Celtic Sea Salt to taste
1-2 Tbsp. extra virgin olive oil or
3 Tbsp water
your favorite herbal seasoning
Put extra virgin olive oil or water in a heavy duty stainless steel skillet.
Sautee the garlic, onions, mushrooms and bell peppers on low to medium heat for
5 minutes. Add the zucchini and saute for another 5 minutes or until crisp tender. Add
Celtic Sea Salt and your favorite herbs to taste.

Eat a healthy variety of fish once or twice a week.
Fish is a good source of heart-healthy, anti-inflammatory omega-3 fatty acids.
But fish is also a source of mercury poisoning. The healthiest fish to choose
is the Wild Alaska Salmon - avoid farmed salmon.
The most dangerous seafood is smoked fish because if not handled properly,
is may contain harmful microorganisms that can cause illness.
