Here are a few quick and easy recipes to enjoy during the warm summer weather...
Mango Blueberry Custard
1 cup frozen mango
2 Tbsp. frozen blueberries
1 very small ripe banana
4 heaping Tbsp. plain whole milk yogurt
Stevia to taste*
Process mango in a food processor until in very small chunks. Add blueberries, sliced banana and yogurt. Process until
smooth. Add stevia to your desired sweetness.
* Liquid stevia is easiest to use. If you have powder, mix 1 teasp. in 2 oz. of water and store in a dropper bottle. Use by
the drop.
Melon Smoothie
Put chunks of your favorite melon, canteloupe, honeydew or watermelon into a blender and blend till creamy.
Grapefruit and Blueberries
1 Oro Blanco grapefruit
2 Tbsp. fresh or frozen blueberries
With a paring knife, peel off the outer skin of the grapefruit. Cut into chunks. Sprinkle blueberries over grapefruit. Enjoy!
Shredded vegetable salad
1 carrot shredded
1 beet shredded
1 turnip shredded
1 small to medium zucchini shredded
1 rib celery chopped
1/2 cup onion chopped
1/4 - 1/2 cup chopped cilantro
1 Tbsp. extra virgin olive oil
3 Tbsp. raw unfiltered apple cider vinegar or to taste
Celtic Sea salt to taste
Your favorite herbs
Combine and refrigerate for 1-2 hours before serving.
