Why Ingredient Lists Hide Sugar in Plain Sight
How much sugar are you actually eating when the word “sugar” never appears on the ingredient list?
Ingredients appear in descending order by weight at the time a food is formulated. Manufacturers may use several sweeteners, leaving each one lower on the list than it would appear if their combined weight were disclosed. Consider a product made with 12 grams of flour, 5 grams of sucrose, and 4 grams of corn syrup. Flour ranks first, while the two separately listed sweeteners total 9 grams. Actual labels disclose the order, not those ingredient weights.
For this screening guide, I count any declaration that supplies sweetness or added mono- and disaccharides without relying on the standalone word “sugar.” Familiar-looking examples include cane sugar, beet sugar, brown sugar, raw sugar, turbinado sugar, demerara sugar, muscovado sugar, powdered sugar, confectioners’ sugar, icing sugar, caster sugar, coconut sugar, palm sugar, date sugar, maple sugar, panela, piloncillo, jaggery, rapadura, honey, molasses, blackstrap molasses, treacle, and invert sugar.
Weight Comes First
Ingredient order says nothing about calories, sweetness intensity, glycemic response, or an ingredient’s final weight after baking. It only reflects formulation weight.
The remaining names become easier to recognize when sorted by chemical structure, syrup form, fruit processing, and malt or starch origin.
Reading the Scientific “-Ose” Names
The suffix “-ose” offers a quick screening clue. The useful label-reading bank includes glucose, dextrose, fructose, sucrose, maltose, lactose, galactose, and trehalose. Glucose, fructose, and galactose are monosaccharides; sucrose, maltose, lactose, and trehalose contain two linked sugar units.
Dextrose
Dextrose in packaged food commonly comes from hydrolyzed corn starch. Its molecule is chemically the same D-glucose found in the bloodstream and many foods. Eight grams of added dextrose and 8 grams of added sucrose each supply 32 kilocalories for label calculations, although their sweetness and digestion differ.
Fructose
Fructose occurs naturally in fruit, yet manufacturers can extract and concentrate it for use as a commercial sweetener. Context matters: fructose listed as an added ingredient differs from the fructose contained within an intact apple.
Maltose
Maltose is closely associated with germinated grains and malt processing, which explains its presence in breads, cereals, malt extracts, and fermented-beverage ingredients.
Check the Whole Word
The suffix is a clue rather than proof. Lactose occurs naturally in milk, while cellulose is structural fiber despite ending in “-ose.”
Heavy Syrups and Liquid Sweeteners
Syrups supply dissolved carbohydrate and water at the same time. That combination helps control viscosity, browning, spreading, and moisture, so formulators select them for physical performance as well as sweetness.
Names to flag include high-fructose corn syrup, corn syrup, glucose syrup, glucose-fructose syrup, fructose-glucose syrup, invert sugar syrup, refiners’ syrup, golden syrup, cane syrup, brown rice syrup, rice syrup, tapioca syrup, agave syrup, agave nectar, maple syrup, sorghum syrup, barley malt syrup, malt syrup, date syrup, carob syrup, honey, and treacle.
High-Fructose Corn Syrup
The widely used HFCS-42 and HFCS-55 grades contain approximately 42 or 55 grams of fructose per 100 grams of syrup saccharides on a dry basis. Glucose makes up the other major sugar. The numbers describe composition, not grams per serving.
Brown Rice Syrup
Enzymes break rice starch into shorter carbohydrates, commonly yielding a mixture rich in glucose and maltose. “Brown rice” identifies the source; it does not give the syrup a whole-grain fiber profile.
Agave Nectar
Agave syrup is generally fructose-dominant, though its composition changes with plant source and processing. The word “nectar” provides no evidence that the ingredient received minimal processing.
A liquid syrup also contains water, so gram-for-gram comparisons with dry sucrose can mislead. Replacing one with the other may change a baked product’s texture and moisture after cooling.
When Fruit Becomes a Concentrated Sweetener
Removing water from juice increases its sugar density. Manufacturers can reconstitute the concentrate to ordinary juice strength or use less water so it contributes sweetness and soluble solids to sauces, snacks, and baked goods.
Watch for fruit juice concentrate, concentrated fruit juice, apple juice concentrate, white grape juice concentrate, grape juice concentrate, pear juice concentrate, pineapple juice concentrate, peach juice concentrate, date paste, apple purée, banana purée, and concentrated fruit purée.
Fruit Juice Concentrate
For FDA added-sugar labeling, concentrate used beyond the amount expected from an equivalent volume of 100-percent juice generally contributes added sugars. Concentrate used only to restore ordinary juice strength receives different treatment.
Evaporated Cane Juice
In May 2016, the FDA issued final guidance explaining that “evaporated cane juice” is not the ingredient’s common or usual name. Manufacturers should use an accurate declaration such as “sugar.” It is neither juice nor a nutritionally distinctive alternative to cane sugar.
Apple Purée
Apple purée can retain water, pectin, acids, micronutrients, and some fiber, so it is chemically different from refined white sugar. Its glucose, fructose, and sucrose remain digestible carbohydrates. A fruit snack can therefore taste intensely sweet while carrying a “no sugar added” claim.
“No added sugar” does not mean sugar-free or low-carbohydrate. Purée, dried fruit, milk, and properly reconstituted juice can still supply intrinsic sugars.
Starch Ingredients That Behave Differently on the Label
Starch-derived ingredients require a separate check because chain length affects how regulators classify them. Related declarations include maltodextrin, dextrin, corn syrup solids, dried glucose syrup, malt extract, barley malt extract, barley malt syrup, rice malt, and malted cereal syrup.
Maltodextrin
Maltodextrin comes from partially hydrolyzed corn, rice, potato, or tapioca starch and conventionally has a dextrose equivalent below 20. It consists mainly of glucose chains longer than mono- and disaccharides. Those chains may raise blood glucose rapidly while contributing little or nothing to the Total Sugars or Added Sugars lines.
Barley Malt
Germinated barley produces an extract containing substantial maltose, glucose, and longer carbohydrate chains. It lends sweetness, toasted flavor, color, and fermentable carbohydrate to cereals and baked goods.
Glycemic response varies with chain length, processing, serving size, the surrounding meal, and a person’s glucose regulation. Label categories answer regulatory questions; they do not fully predict the glucose curve after eating.
Use Both Clues
The Added Sugars line measures qualifying added mono- and disaccharides. The ingredient list reveals rapidly digested carbohydrate sources, including maltodextrin, that may sit outside that total.
Start With the Added Sugars Line
You do not need to memorize more than 60 names before buying breakfast cereal.
The updated FDA Nutrition Facts panel places an indented line reading “Includes Xg Added Sugars” beneath Total Sugars. It combines qualifying added sugars whether the ingredient paragraph names sucrose, honey, agave, or syrup. Maltodextrin remains an important exception because its longer glucose chains may not be fully captured there.
- Confirm the serving size.
- Read the grams beside “Includes Xg Added Sugars.”
- Check the percent Daily Value.
- Scan the ingredients for concentrates, syrups, malt products, and maltodextrin.
Manufacturers with at least $10 million in annual food sales had to use the redesigned label by January 1, 2020, and most smaller manufacturers followed by January 1, 2021. Values still appear per serving and may be rounded, so packages containing several servings deserve a second calculation.
On the standard 2,000-kilocalorie label, the Daily Value for added sugars is 50 grams: a single serving containing 10 grams has already reached 20% of that daily benchmark.
